My husband and his grandpa would make turkey sandwiches and go out to yard sales! Lol!
No one in my family will eat dark meat, so after removing both breasts the turkey goes into the trash, or to the animals. Although, sometimes I'll make turkey broth with the rest of the carcass. We've tried to just cook a breast but it's not the same.
I usually make turkey croquettes with leftover meat.
I don't have leftovers anymore since my brother hosts and I don't have to cook. When I did have leftovers I made a casserole. I would line the dish with the mashed potatoes and bake it for about 15 minutes. Then I would layer the turkey in. Then add some gravy, Add a layer green bean casserole. Then top with stuffing and bake it for 30 minutes. You had the whole Thanksgiving dinner over again in each bite.
I always make a pot of turkey noodle soup. (I still some for today's lunch.) A few times I've made turkey pot pie.
I didn't have any leftovers, but I did take the cranberry sauce. I just ate it right out of the can.
I clone the original turkey dinner as many times as I can.
